What You Need

  • 4 large bell peppers
  • 1 tbsp olive oil
  • 1 pound lean ground turkey

  • 1 cup cooked brown rice
  • 1 cup diced tomatoes
  • 2 tpsp tomato paste
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 2 tbsp chopped fresh parsley

Instructions

  1. Preheat the oven to 375°F.
  2. Slice the tops off each bell pepper and remove the seeds and membranes. Lightly brush the outside of each pepper with olive oil before placing them upright in a baking dish.
  3. Heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it into small pieces as it cooks.
  4. Add the diced onion and garlic, cooking for several minutes until softened and fragrant.
  5. Stir in the diced tomatoes, tomato paste, Italian seasoning, smoked paprika, sea salt, and black pepper. Simmer for about five minutes to allow the flavors to combine.
  6. Fold in the cooked brown rice and half of the mozzarella cheese, stirring until evenly incorporated.
  7. Carefully spoon the filling into each prepared pepper, packing it gently without pressing too firmly. Sprinkle the remaining mozzarella over the tops.
  8. Pour a small amount of water into the bottom of the baking dish to help steam the peppers during baking.
  9. Cover loosely with foil and bake for 35 minutes.
  10. Remove the foil and continue baking for another 10-15 minutes until the peppers are tender and the cheese is lightly golden.
  11. Garnish with chopped parsley or fresh basil before serving warm.
