Sweet Potato Lentil Curry with Basmati Rice Recipe
Ingredients
- 1 cup dried red lentils, rinsed and drained
- 2 medium sweet potatoes, peeled and diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14 ounces) diced tomatoes
- 1 can (14 ounces) coconut milk
- 2 cups vegetable broth
- 2 tablespoons curry powder
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Basmati Rice:
- 1 cup basmati rice
- 2 cups water
- Pinch of salt
Optional Garnish: 19. Fresh cilantro or chopped green onions for garnish


Instructions
- Rinse the basmati rice under cold water until the water runs clear.
- In a medium saucepan, combine the rinsed rice, water, and a pinch of salt.
- Bring the water to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- Once done, remove from heat and let it sit covered for 5 minutes. Then fluff the rice with a fork and set aside.
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add diced onions and cook until translucent, about 5 minutes.
- Add minced garlic and grated ginger to the pot, and cook for another 1-2 minutes until fragrant.
- Stir in curry powder, turmeric, cumin, coriander, and cayenne pepper, and cook for 1 minute to toast the spices.
- Add diced sweet potatoes, rinsed lentils, diced tomatoes (with their juices), coconut milk, and vegetable broth to the pot. Season with salt and pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the sweet potatoes are tender and the lentils are cooked through. Stir occasionally to prevent sticking.
- Once the curry is cooked and the sweet potatoes are tender, taste and adjust seasoning if needed.
- Divide the cooked basmati rice among serving bowls.
- Ladle the sweet potato lentil curry over the rice.
- Garnish with fresh cilantro or chopped green onions, if desired.
- Serve hot and enjoy the comforting flavors of this sweet and savory curry!
