Ingredients
- 2 cups steamed greens (kale, spinach, or collard greens)
- 1 cup cooked legumes (lentils, chickpeas, or mung beans)
- 1 apple, chopped
- 1 pear, chopped
- 1 tablespoon fresh ginger, grated
- 1/2 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 tablespoon lemon juice
- 1 tablespoon olive oil or ghee
- Fresh cilantro or parsley for garnish
- Ginger tea, for serving
Instructions
- Prepare the Greens and Legumes: Start by steaming your choice of greens until they are tender but still vibrant in color. Cook the legumes separately until soft. Set both aside.
- Sauté the Ginger and Spices: In a large pan, heat the olive oil or ghee over medium heat. Add the grated ginger, cumin powder, turmeric powder, black pepper, and salt. Sauté for 1-2 minutes until the spices become fragrant.
- Combine the Ingredients: Add the steamed greens and cooked legumes to the pan with the spices. Stir well to coat everything evenly with the spices. Cook for an additional 3-5 minutes, allowing the flavors to meld together.
- Add Fruits and Lemon Juice: Remove the pan from heat and add the chopped apple, pear, and lemon juice. Toss gently to combine, ensuring the fruits are well distributed throughout the dish.
- Serve: Transfer the mixture to serving bowls. Garnish with fresh cilantro or parsley for added flavor and color.
