Jollof Rice

Jollof rice, a cherished West African dish, tantalizes taste buds with its vibrant flavors and captivating aromas. With its unique blend of spices, vegetables, and fragrant rice, Jollof rice offers a symphony of tastes that reflect the rich culinary heritage of the region.

The origins of Jollof Rice begin in the West African region. The name “Jollof” is believed to be derived from the Wolof people of Senegal, who have a similar rice dish in their cuisine. Over time, Jollof rice has evolved, becoming a cultural staple in many countries, including Nigeria, Ghana, Senegal, Sierra Leone, and Gambia, even sparking friendly debates and competitions among West Africans vying for the title of the best Jollof rice…but we’ll leave that decision up to you!

Authentic Jollof Rice Recipe

  • 2 cups long-grain parboiled rice
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 scotch bonnet pepper, whole (optional, for spice)
  • 1 can (400g) diced tomatoes or 4 ripe tomatoes, blended
  • 1 teaspoon dried thyme
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon dried bay leaves
  • 2 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)
  1. Rinse the rice thoroughly under cold water until the water runs clear. Drain and set aside.
  2. Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  3. Stir in the minced garlic, diced red and green bell peppers, and scotch bonnet pepper (if using). Sauté for a few minutes until the peppers soften.
  4. Add the blended tomatoes or canned diced tomatoes to the pot. Stir in the dried thyme, curry powder, paprika, dried bay leaves, salt, and pepper. Allow the mixture to simmer for about 10 minutes, stirring occasionally.
  5. Pour in the chicken or vegetable broth and bring the mixture to a boil.
  6. Add the rinsed rice to the pot, stirring well to ensure the rice is evenly coated with the tomato mixture. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is tender and cooked through.
  7. Once the rice is cooked, fluff it gently with a fork. Remove the scotch bonnet pepper (if used) and bay leaves.
  8. Serve the Jollof rice hot, garnished with fresh cilantro or parsley if desired. It pairs well with grilled chicken, fried plantains, or a side salad.
