Lentil & Kale Soup
Lentil and kale soup is one of those meals that meets you exactly where you are — especially in March.

What You Need
- Green or brown lentils
- Fresh kale, chopped
- 2–3 shallots, diced
- Garlic
- Carrots and celery
- Vegetable or chicken broth
- Grapeseed oil
- Sea salt, black pepper, cumin
- Coconut milk (optional for a slightly creamier texture)
- Red pepper flakes (optional for a little heat)
- Rice (optional for a heartier version)


Instructions
- Heat grapeseed oil in a large pot over medium-low heat.
- Add diced shallots and cook gently until soft and slightly golden.
- Add garlic, carrots, and celery. Cook for 5–7 minutes or until softened and fragrant.
- Stir in lentils and broth. Bring to a gentle boil, then reduce to a simmer.
- Let cook for 20–25 minutes or until lentils are tender.
- Add chopped kale and cook for another 5–7 minutes or until wilted.
- Season to taste.
